Ingredients
- One medium white onion
- One clove of garlic
- Juice of one lime
- 150 ml of water or stock
- 400 g tin of beans (Pinto is ideal but Borlotti or Black beans work fine)
- 1/2 tbsp ground cumin
- 1 tbsp ground coriander
Method
- Dice onion and garlic finely. Brown in a pan with 1 tsp oil or water on medium heat.
- When onions are browned add spices to dry roast them. This should take one to two minutes
- Add drained beans and mix to combine. Add water and mash with potato masher.
- Allow the water to evaporate to preferred consistency.
- Turn heat off and add juice of one lime. Mix and enjoy
