My refried beans recipe

Ingredients

  • One medium white onion
  • One clove of garlic
  • Juice of one lime
  • 150 ml of water or stock
  • 400 g tin of beans (Pinto is ideal but Borlotti or Black beans work fine)
  • 1/2 tbsp ground cumin
  • 1 tbsp ground coriander

Method

  1. Dice onion and garlic finely. Brown in a pan with 1 tsp oil or water on medium heat.
  2. When onions are browned add spices to dry roast them. This should take one to two minutes
  3. Add drained beans and mix to combine. Add water and mash with potato masher.
  4. Allow the water to evaporate to preferred consistency.
  5. Turn heat off and add juice of one lime. Mix and enjoy
